How to Make Your Own Vinegar
Vinegar Making Equipment
Required:
- Wide-mouthed brewing vessel. Use something like a small jelly jar, a quart
Mason jar, a one-gallon sun tea jar, an oak barrel, or something similar. Make
sure that the container is made from glass, ceramic, stainless steel, or wood.
Do not use containers made of materials that react badly to acetic acid like
aluminum, iron, or copper.
- An air-porous cover like a paper towel or cheesecloth. This item is used to
cover the mouth of the vinegar container but still allow air to flow in and
out. The cover prevents most dust and other items from falling in and
contaminating the vinegar. It also provides a barrier against vinegar flies
(Drosophila spp, a type of fruit fly). Another creature that can be
found in vinegar is the vinegar eel (Anguillula acetic/turbatrix). It
is a free-living, non-parasitic roundworm that is adapted to living in a low
pH (acidic) medium and feed off the bacteria that produce the vinegar.
- Rubber band. Used to hold the cover on the container.
Optional but helpful:
- Coffee filters to filter the vinegar
- Kitchen funnel to help bottle the vinegar
- Nice bottles to store the finished vinegar
- Labels to identify the vinegar
- Oak chips to age and mellow the vinegar
- Herbs, spices, and flowers to flavor the vinegar
