Alfgeir's Pecan Finger Cookies ("Electrum Bars")

Dreiburgen Yule 2005

  • 1/2 cup powdered sugar
  • 1/2 cup chopped pecans (preferably a little more than that)
  • 1 cup butter (make sure you use salted butter)
  • 1 1/2 cups flour
  • 2 teaspoons vanilla

Mold into finger-shaped gobs of dough. This recipe usually makes between 50 and 60 for me, obviously depending on how big they are. Bake at 250 F for 1 hour and 15 minutes, or at 275 F for 1 hour. They will be firm but not brown when done.

When removed from the oven and still fairly hot, roll them in powdered sugar on a plate or in a bowl so that sugar will melt onto them. Place them on plate or board to eat.
